How do two Z's stop spam?

Leaving an email address on your website in text enables spam programs to find your address, send spam to it, and share your information with other spam distributors. The two Z's act as a form of encryption: the robots see Zjoe@Zjoebligh.com and attempt to send spam to this address, instead of my real one.
